Ingredients:
- – 2 cups all-purpose flour
- – 2 cups sugar
- – 2 eggs
- – 1 tsp baking soda
- – 1 tsp vanilla extract
- – Pinch of salt
- – 1 (20 oz) can crushed pineapple (undrained) in its own juice
- – 1 cup chopped nuts (optional)
- For the Cream Cheese Frosting:
- – ½ cup butter (1 stick), softened
- – 1 (8 oz) package cream cheese, softened
- – 1 tsp vanilla extract
- – 1 ½ cups confectioners’ sugar
- – Coconut for garnish (optional)
Directions:
1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
2. In a large bowl, mix together the flour, sugar, eggs, baking soda, vanilla extract, and salt until well combined.
3. Stir in the crushed pineapple (including the juice) and nuts (if using).
4. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Let the cake cool completely before frosting.
5. To make the cream cheese frosting, beat the softened butter and cream cheese together until smooth. Add in the vanilla extract and gradually mix in the confectioners’ sugar until fully combined.
6. Once the cake has cooled, spread the frosting evenly over the top. Sprinkle with coconut (optional) for garnish.
