Ingredients
- 1 1/2 lbs ground beef
- 1 cup breadcrumbs
- 1 large egg
- 1/2 cup milk
- 1 onion, finely chopped
- 1 red bell pepper, finely chopped
- 1 green bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tbsp ketchup
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried oregano
- 1 1/2 cups shredded provolone or mozzarella cheese, divided
- 1 tbsp butter
- 1 tbsp olive oil
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a loaf pan or line it with parchment paper.
- Cook the Vegetables: Heat butter and olive oil in a skillet over medium heat. Sauté the onion, red bell pepper, green bell pepper, and garlic for about 5 minutes until softened. Set aside to cool.
- Prepare the Meatloaf Mixture: In a large bowl, combine the ground beef, breadcrumbs, egg, milk, Worcestershire sauce, ketchup, salt, pepper, and oregano. Stir in the cooled sautéed vegetables and 1 cup of the shredded cheese. Mix thoroughly.
- Shape and Bake: Press the meat mixture into the prepared loaf pan, ensuring an even layer. Bake for 45-50 minutes or until the internal temperature reaches 160°F (71°C).
- Add Cheese Topping: Take the meatloaf out of the oven and sprinkle the remaining 1/2 cup of cheese on top. Bake for another 5-7 minutes until the cheese melts and bubbles.
- Rest and Serve: Let the meatloaf rest for 10 minutes before slicing. Garnish with chopped parsley and serve hot.
